Raw honey is honey as it comes from the hive: unblended, unheated, and only coarsely strained. Nothing is added and nothing of substance is taken away. That is the whole difference between Peninsula Honey and most of what is sold in shops, where honey is blended from several countries and heated so it pours the same way every time.
Because it is raw, it behaves like a living food. It crystallises. It varies from harvest to harvest. Ivy sets hard and pale; the heather is dark, bold and aromatic. None of that is a fault.
