Ivy is the last forage of the year. When most nectar sources have finished, the bees work the ivy along the stone walls and field edges of the Cooley Peninsula through the autumn.
The result is one of the most distinctly Irish honeys you can buy: pale, firm-set and mild, with a clean, slightly nutty character. If your jar arrives looking almost white and solid, that is exactly what pure ivy honey does.
