This is less a recipe than an honest recommendation. Fresh sourdough - warm from the oven or just slightly toasted - with a drizzle of Clear honey is one of those pairings where the less you add, the better it gets. The Clear honey suits it perfectly: it is runny enough to sink into the bread, and its clean floral sweetness does not fight with the tang of a good sourdough crumb.
Tips from Niamh: Warm bread is everything here - the honey melts straight into it. A tiny pinch of sea salt over the top sounds odd, I know, but try it once and you’ll keep doing it.
Ingredients
- Fresh sourdough, thickly sliced (lovely warm or lightly toasted)
- Good butter (optional)
- Peninsula Honey, to drizzle
- A pinch of flaky sea salt (optional)
Method
- Slice the sourdough thickly.
- Butter it if you like, while it is still warm so the butter melts in.
- Drizzle generously with Peninsula Honey.
- Add a tiny pinch of flaky sea salt if you want to lift the sweetness. That is all it needs.
If you find yourself wanting to try the honey somewhere it can really show off its character, the cranachan is the other no-cook recipe in the collection - and a good excuse to open the Heather jar.
